All over the social media, I have seen many people starting new diets or just eating better for their New Year Resolutions. Some people have failed and some have stuck to it. Even Mark and I have made that same resolution to diet. Through Mark’s mom idea about this soup. We have been making it every week for the past couple of weeks and it is working. So if your looking for that no calorie soup, which is so easy to make, Please send us a note to let us know what you think.
Prep time: 30 minutes
Servings: 10-12 people.
INGREDIENTS:
6 c Beef Stock/Broth
4 c Cabbage (shredded)
2 c Zucchini (grated)
1 c Celery (chopped)
1 Onion (chopped)
2 (cans) Tomatoes (diced) use fresh when possible.
2 Bay Leaves
1 tsp Basil (dry)
2 tsp Coriander
2 Tbsp Garlic (minced)
DIRECTIONS:
– In large pot,
– Saute onion, garlic and celery in 1 tsp of olive oil.
– Add beef stock/broth.
– Add cabbage, tomatoes, and zucchini.
– Add seasonings, and Bay Leaves.
-Boil for 15 minutes, then
– Allow to simmer for 15 minutes.
This soup is very comforting and I hope you enjoy it as much as we do.
There is no wrong way to make it and if you like a little spice to your dishes, try a little pepper sauce to the soup. Eating the soup the day after you make it, try this soup the next day when the flavors had a chance to blend in better.
