Lemon-Strawberry Cake With Butter Cream Frosting

     Recently We celebrated my daughter’s 14 Birthday. Santanna is very picky when it comes to Cakes or any types of sweets. When she was asked about what kind of cake she would like, She had said anything but chocolate. So her father made the cake which he has made before when working at the restaurant he worked at and brought home a couple of pieces for her and I to try,She liked it. So this cake he made for her again and it was a hit.

It is easy to make, Its just waiting for the different methods to cool, was the hard part.

Here is is method, once you try this, I hope this will be a favorite for you also.Please let me know how this works out?

Preheat oven to 350 Degree’s.

Place parchment paper into 2 13+9 shallow baking pans.

INGREDIENTS:

3 c                    Flour(all-purpose)

2 tsp                 Baking Powder

1 tsp                 Baking Soda

1 c                    Butter (melted)

2 c                    Sugar

6                       Eggs

1 Tbsp              Vanilla

1 c                     buttermilk

1                        Lemon (zest &juice)

DIRECTIONS:

– sift all dry ingredients.

– Stir in butter, eggs, vanilla, buttermilk and zest of the lemon, cut lemon in half and squeeze all of the juice out.

– Place half of the mixture in one pan and the other half in other pan.

-Place pans in 350 degree oven for 35 minutes or until tooth pick inserted comes out clean.

Once the cake is out of oven, let cool on a wire racks, about a 1/2 hour. While you are waiting, you can start the filling.

INGREDIENTS:

1 LB              Strawberries

1/2 c              Buttermilk

1/2 c             Powdered sugar

DIRECTIONS:

– Place strawberries into medium sauce pan on medium heat to soften. Almost soup like.

– Strain the strawberries into another container. It should just be juice (leftover matter makes for great jelly for toast).

– Allow to cool before spreading onto cake.

– Mix well

– Once the two cakes have cooled. Take buttermilk and powdered sugar mixture mix together.

– Spread on both cakes.

– Spread strawberry mixture on both of the cakes.

– Take one of the cakes and flip it over unto the other cake, So fillings are together.

BUTTERCREAM FROSTING INGREDIENTS:

1 lb                     Butter (softened)

3 lbs                    Cream cheese

1 lb                      Powdered sugar

1 Tbsp                 Vanilla

2 c                        Whip Cream

Directions:

– Cream together the butter and cream cheese.

– Add in the powdered sugar and vanilla

– Mix well

– Spread over the cake.

He has also used blackberries for this cake too.

  1. Anything but chocolate? Who is this girl? Glad to hear your husband knows what he’s doing and managed to save her Birthday.
    I would totally fail at the flipping part (to put both fillings together). Everything would crumble.
