Asian Chicken Soup Made Easy

        This soup was amazing, its got a little Asian flare to it and a somewhat American to, so very healthy. I know if you were to make this soup,you will have it over and over again and it even our picky eater thought it was great.

 

INGREDIENTS:

1 lb                      Chicken breasts ( bite sized pieces)

2                           Tomatoes (wedged small)

1 c                        Snow peas (cut into small pieces)

2 sprigs                 Chives

1/4 c                    Green Onion

1/4 c                    Cilantro

1 Tbsp                 Soy sauce

1 stalk                  Lemon grass (bruised) taking the lemon grass and hit it with a mallot

2 quarts               Chicken stock

Add all ingredients to a stock pot and allow to boil for 30 minutes, then simmer for another 30.

* We poached a egg into our soup.

* Hot sauce (Sriracha) can be another add- in, if you like it spicy.

I just had to take a picture of my picky eater eating it.
