Have to many tomatoes from the garden and not sure what to make with them.
Here is our marinade that is easy to make and very refreshing to the palate.
Here is our recipe that we hope you will enjoy.
INGREDIENTS:
3sprigs Parsley (chopped)
2sprigs Oregano (chopped)
1sprig Basil (chopped)
1/2 Onion (sliced very thin)
1tsp Kosher Salt
1/8tsp Pepper
1tsp Sugar
1/4c Balsamic Vinegar
3large Tomatoes (cut into wedges)
DIRECTIONS:
– In a large bowl;
– Add chopped herbs and tomato wedges.
– Add the onion slices.
-Add salt, pepper, sugar, balsamic vinegar, and olive oil.
– Mix well and put in a tightly sealed container and store in refrigerator until
your ready to serve.
* You can keep this marinade for a week in the fridge.
* This makes for a great snack for anytime time of day too. Even at midnight.
This marinade is what I call my kind of comfort food.
