Refrigerator Pickles

These are my favorite refreshing pickles for hot summer days.

2     pickling pickles (regular pickles work too).

2     tomatoes (cut into wedges)

1     red onion

5     radishes (cut into wedges).

2     carrots (cut into strips).

1     chili pepper

11/2c rice vinegar(I  also use rice vinegar)

1c     cilantro leaves (chopped)

4tbsp  granulated sugar

Directions:

1) Wash your vegetables.

2) Peel and slice the vegetables.

3) Put vegetables in jars or in a crock(as shown), and top with pickling juices.

4) Allow to sit for at least 4 hours before enjoying them, the longer they sit, the better refreshing they are.
