Corn Pudding Made Easy

   One of our family favorite side-dishes would be Corn Pudding. This is our quick and easy version.

INGREDIENTS:

1 can          Whole corn (drained)

1 can           Cream-style corn

8 oz              Sour cream

1 bunch        Green onions (chopped)

1 small box   Corn muffin mix (Jiffy)

1 tsp              Sugar

2                    Eggs

(Optional 1 c   Shredded cheese)

DIRECTIONS:

– Preheat oven to 350 degrees.

– Combine all ingredients

– Pour into a greased 9×13 pan.

– Bake at 350 degrees for 45-60 minutes.

Other options would be adding chopped green and red peppers. Since my mom is helping write this,she says chopped green tomatoes might be another option. (This has not been tested).

  1. Love the rich moisture texture of this yummy dish. Thinking I might add bacon crumbles to the batter as another option. Also contemplating making these in a muffin pan, so some could be easily frozen for future use. Thanks for sharing!
